Rice and Veg and Lentils
I call this Rice and Veg and Lentils and we have this about once a week. It’s basically 3 or 4 veg (here is courgette, potato, red pepper, and savoy) stir fried with onion, garlic, coconut oil and salt and pepper. Then I mix it with brown rice and lentils (today I used urad dal) and chow down! So yummy. Even the kids eat it. (the little one takes a *tiny* bit of encouraging).

This is a recipe I adapted from Jamie Oliver’s. I couldn’t find Rogan Josh paste at the amazing Phoenicia Foodhall in Kentish Town so I used Patak’s Mild Curry Spice Paste instead.
